How a Tennessee Whiskey Distillery Works

Moonshine and distilleries have gained popularity of late and many people seem to have an expressed interest in both how it’s made and how a Tennessee Whiskey distillery works.  Distilling whiskey can be remarkably time consuming and a rather complex overall process with endless tubes, specialized processes, fork lifts, and barrels galore.

For those of you who wonder how a Tennessee Whiskey distillery works, we thought we would dedicate an article to this very intriguing and somewhat unique topic.  This is just a quick, simple and to the point explanation of the process and one that we thought would satisfy the curiosity of those in wonder. 
There are three basic steps that go into distilling whiskey:  fermentation, distillation and aging. 

Step One – Fermentation
The key to this first step is yeast and grain.  Break down the grain by cooking it, mashing it, and finally malting it.  Once this process is completed, you add your yeast.  As the added yeast begins to absorb the grain compound and continues to absorb it, the alcohol begins to produce.   At the close of the fermentation process you find yourself with a sweet, soupy substance.  After sitting in the tanks for some time, this same sweet soupy substance is then transferred to a still to begin the next stage – the distillation process. 

Step Two – Distillation
The entire distillation process takes place within the still.  Water, alcohol and all the other compositions that were produced during fermentation, have different boiling points.  While your liquid sits in the still, you gradually raise the temperatures to boil off certain elements and molecules.  Begin by boiling off at a set temperature in one tank.  Follow this procedure by then boiling off at a higher temperature in another tank, and finally increase your temperature yet again for boiling off in still another separate tank.    

When the ‘boiling off’ process has been completed the new compounds that are produced are then cooled down for an extended period of time, allowing them to return to a liquid form from the soupy form we started out with in the still.   
There are three sectors to your boiled off substance.  The substance that comes off first is called the ‘heads” and has a horrible smell while being quite poisonous.  These heads are discarded immediately since they are poisonous and can cause serious problems and even death.  The next portion that is boiled off is called the ‘hearts’ which is where the majority of the actual alcohol is found.  Finally, the last portion that is boiled off is called the ‘tails’ which contains the heavier alcohols.    The Tennessee Whiskey distilling process is repeated a couple of times before heading onto the final aging process.   

Step Three - The Aging Process
Once the Tennessee whiskey has been distilled a couple of times, it is then transferred from the still into oak barrels that are stored in warehouses until the time arrives to tap the barrels and bottle the whiskey. This waiting period is called the aging process and, for whiskey, can last for one year, five years, or even as many as 18 years.
